Cooking pizza with cracklings:

Step 1: prepare the flour.

Puff pastry likes high-quality flour of the highest grade, but before using it, it must be properly prepared. We take a dry, deep bowl and sift into it through a sieve with a fine mesh 500 grams of wheat flour. Due to this simple process, it becomes more loose, dried and saturated with oxygen. Sifting also helps to get rid of any unwanted litter, which very often gets into the package with flour during its packaging at the factory.

Step 2: knead the dough.

In a clean deep bowl we drive in 1 chicken egg without shells, add 1/2 teaspoon of salt to it and beat them with a whisk until lightly splendid. After pour 200 milliliters of kefir and mix until smooth. Then we introduce the sifted wheat flour into the resulting mixture.

We act slowly, adding spoon after spoon while kneading the elastic dough. When the cutlery stops helping, we continue to knead with our hands. We don’t put all the flour, as soon as the dough takes the desired, elastic, but at the same time elastic, not sticky texture, put the bowl aside. In a container with the remaining flour, put softened butter and knead them to a uniform consistency with a fork.

Step 3: layered dough.

Now sprinkle the tabletop with 2 - 3 pinches of wheat flour and spread the dough on it. Then, using a rolling pin, we roll it into a square layer up to 1 centimeter thick, spread the mashed butter in the center of the layer, distribute it along almost the entire perimeter of the dough and turn the semi-finished flour product in the form of an envelope. Press lightly with his hands, pinch the edges so that there are no cracks, wrap in plastic wrap and send to the refrigerator 30 minutes.
After the required time has passed, remove the dough from the refrigerator, put it again on the countertop, sprinkled with a small layer of wheat flour, re-roll it into a layer up to 1 centimeter thick, but now we act without pressure gradually. After we again form the envelope from the reservoir, wrap it in film and again send it to the refrigerator already on 2 hours.

Step 4: prepare the lard.

20 minutes before the formation of pizza, proceed to the preparation of the toppings and start with bacon. You can use any for pizza, but in this embodiment it is the neck with layers of meat. We wash the fat under cold running water from any kind of pollution, dry it with paper kitchen towels from excess moisture, put it on a cutting board and use a knife for cutting raw meat, cut into arbitrary shape layers up to 5 millimeters thick.

Step 5: fry fat.

After we turn on the stove to the middle level and put the pan on it. When it warms up, we throw chopped fat into it and fry it, stirring with a kitchen spatula until it is a beautiful golden color. This process will take no more than 5 minutes. We transfer the ready-made greaves to a pre-spread paper towel, let the paper absorb the excess fat and put them in a deep plate.

Step 6: prepare the cheese.

Remove the packaging from a piece of hard cheese, cut off the paraffin crust and rub it on a medium or fine grater. We shift the cheese into a deep plate. Turn on and preheat the oven to 180 degrees Celsius and grease a large non-stick baking sheet with 25 grams of butter.

Step 7: prepare the eggs with spices.

In a small bowl we drive 4 chicken eggs without shells and beat them with a whisk until splendid. After pouring 1 cup of sour cream, add 2 - 3 pinches of nutmeg, black pepper and salt to taste. Mix until smooth.

Step 8: form the pizza.

We take out the dough from the refrigerator, remove the film from it, knock it into a ball, put it on a table, sprinkled with a thin layer of wheat flour, knead the palms of the hands in a cake and roll it into a round layer up to 1 centimeter thick. We lay pork greaves in an artistic mess on the surface of the flour base, sprinkle them with chopped cheese and pour in the egg-sour cream mixture.

Step 9: bake the pizza.

We send pizza to the oven preheated to the required temperature, placing the pan on the middle rack. Bake for 12 - 15 minutes or to a light golden blush on the surface of puff pastry. During this time, the cheese will melt, and the beaten eggs will reach full readiness at the same time as the dough. After the required time has passed, remove the baking sheet from the oven, holding it on both sides with kitchen tacks. We pizza pizza with two kitchen shovels, put it on a large flat dish, cut into 6 - 8 portioned pieces and serve.

Step 10: serve pizza with cracklings.

Pizza with cracklings is served hot or warm, the second option is preferable, because hot flour products are very harmful for digestion. Savor this yummy with any salads of fresh or boiled vegetables.
