Cooking Orange Cheesecakes:

Step 1: chop the nutmeg.

A little sweet and a tart, spicy aroma of nutmeg not only goes well with other spices that make up our dish, but will also add its oriental notes to the dough of orange cheesecakes. Before we chop the nut, wash it under running water, and then use a paper towel to wipe it well dry with water. Then, using a fine grater, rub our ingredient immediately into a small bowl. Grind the nut fruit with a peel, then your dish will turn out more flavorful.

Step 2: prepare the mixture of spices.

In a bowl with chopped nutmeg with a teaspoon, pour ground spices: cumin, cinnamon, ginger and add vanilla sugar. Using the same tableware, mix all the ingredients well until a homogeneous mixture.

Step 3: prepare the carrots.

Using a knife, remove the peel from the carrot and then rinse well under running warm water. Then, using a fine grater, rub our ingredient on a cutting board. And now, with clean hands, we shift the carrot chips into a bowl.

Step 4: prepare the carrot mixture with spices.

We put the butter in the pan and put the container on medium heat. When the butter melts slightly, reduce the fire to a minimum and add a mixture of spices to the container with a teaspoon. Using a kitchen spatula, mix all the ingredients well and warm for 1-2 minutes. Then, using a tablespoon, transfer the grated carrots from the bowl into the pan and mix all the ingredients with a wooden spatula. With constant stirring of the mass with improvised inventory, simmer the carrots for 2-3 minutesand then add a few tablespoons of water to the stewed vegetable ingredient in the container and, after mixing everything, simmer our mixture for another 3-5 minutes. Carrots should not have a golden crust, they just have to stew well with all the spices and become soft. After - turn off the fire, and cover the pan with a lid so that the carrot ingredient is well saturated with the aromas of all spices.

Step 5: prepare the flour.

Using a sieve, we sift the flour into a deep bowl so that in future work with this ingredient, we do not form lumps, and also to enrich the flour ingredient with oxygen from the air. We use wheat flour, premium, finely ground and the brand that you trust.

Step 6: prepare the cottage cheese.

Any heat treatment of cottage cheese makes it difficult for the body to digest it. Therefore, to avoid this, it is necessary to grind the cottage cheese very carefully so that it becomes more uniform, and the cheesecakes are soft and tender. We transfer our ingredient to a clean sieve and with the help of a tablespoon, constantly pressing it on the cottage cheese, pass the milk ingredient through the sieve into a free plate.

Step 7: prepare the eggs.

We wash the chicken eggs under running water in order to prevent intestinal infection and, using a knife, break the eggshell. Pour the egg white and yolk into a free bowl, add a pinch of salt and the right amount of sugar. Using a hand whisk or fork, beat everything lightly.

Step 8: prepare the dough.

Using a tablespoon, add sour cream, cottage cheese and a ready-cooled carrot mixture to a bowl with egg-sugar mixture. Mix everything thoroughly until a homogeneous liquid mass is obtained using the same tableware. Then we gradually introduce flour into the container for our liquid mass in small portions from a measuring cup, and mix everything well with a tablespoon until a homogeneous test mass is formed. The dough should not turn out cool. It turns out to be soft and slightly sticky in consistency (therefore, the dough sticks to your hands first of all), but you can form cheesecakes out of it only by first processing your hands with flour.

Step 9: prepare the orange cheesecakes.

So, give the test the shape of a bar thick 5-6 centimeters. Then, cut it across into small sausages, weighing 40-50 grams each, and bread in flour, giving them the shape of meatballs thick 1.5 centimeters. Pour vegetable oil into the pan and put the container on medium heat. When the oil is well warmed up, we put the cottage cheese pancakes in a pan with butter at a short distance from each other and fry them on both sides until a golden brown crust forms 5-7 minutes. Attention: so that the cheesecakes are not raw inside, transfer them from the pan with a spatula to a baking sheet and bake in the oven, preheated to a temperature 180 ° C during 5-7 minutes. Using kitchen tackles, we take ready-made cheesecakes from the oven and shift them, using the same equipment, onto a wide serving dish.

Step 10: serve the orange cheesecakes.

We serve orange cheesecakes to the table immediately after cooking, so that they are still hot. Of course, not without the fact that they are no less tasty and cold with sour cream, honey or any kind of jam. They are especially good for breakfast. And since they are prepared very easily and simply, you can treat yourself to our dish in the morning. Good appetite!

Recipe Tips:

- - In addition to carrots, you can add raisins or chopped dried apricots to the dough.

- - For the preparation of cheesecakes it is better to use fresh nutmeg. Of course, this ingredient can be used already in pre-ground form, having bought it in any supermarket or grocery store as a spice, but in this case its aroma will not be pronounced, due to which it will hardly be felt in cheesecakes.

- - For the preparation of orange cheesecakes, it is better to take carrots of bright orange and sweet varieties.

- - So that the dough does not turn out liquid, it is better to take granular cottage cheese.

- - You can cook the dish both from the store cottage cheese and from home. I prefer to cook cottage cheese pancakes from home-made cottage cheese, as it goes fatter and the dish with it turns out to be much more tender.
