Cooking pollock in batter:

Step 1: Pickle the fish.

Take the pollock fillet, clean it, rinse thoroughly and cut into pieces. Fillet can be cut in two ways: longitudinally long strips or across the fillet. After that, you need to shift the pieces of pollock into a bowl, sprinkle them abundantly with lemon juice, sprinkle with dry paprika, coriander, salt and pepper to taste. You can also add your favorite seasonings suitable for fish to the marinade. Cover the bowl and leave the pollock pickled for 20 minutes.

Step 2: Cook the batter.

While the fish is pickling, let's start cooking batter. Pour the contents of three eggs into a small bowl. Salt them and beat with a whisk until smooth. Pour milk or cream into a bowl. After this, sifted premium wheat flour is gradually poured and in parallel the mass is constantly mixed so that no flour lumps are formed. After this, the batter is thoroughly whipped to a single mass.

Step 3: Fry pollock.

When the fish is pickled, we take out a piece, carefully dip it in batter and spread it on a heated frying pan. It is necessary to fry pollock on both sides over moderate heat until golden brown. For readiness pollock need to be fried for 5-7 minutes. It is very important when frying to leave enough space between pieces of fish and not to put them too closely, otherwise the pieces of pollock will stick together and will not look aesthetically pleasing on the dish.

Step 4: Serve the pollock in batter.

Ready pollock can be served as a cold appetizer or in hot form, as a second dish. You can offer any side dish and sauce to it. You can decorate pollock with greens, lemon slices or a small amount of your favorite sauce. Bon appetit and well-being!
