The beans are soaked in the evening.

I boiled the beans with the ciolan and a little salt in the pressure cooker for about an hour.

Meanwhile, I put the vegetables in oil for a few minutes, I put water and I let them boil.

When the beans boiled I put it in a larger pot and added the boiled vegetables separately.

I took out the ciolan on a plate, took out the bones, put it on and put it in the pot.

I filled it with water and salt and let it boil for a few minutes.

I put the finely chopped tomatoes and tomato paste and let it boil for 10-15 minutes.

I adjusted the salt and added the finely chopped greens.

After a few boils it is ready.

Beans 500 g
Smoked ciolan 750 g
Smoked ribs 400g
Onions 2 pcs
Large carrots 2 pcs
Parsley root 2 pcs

Moisturize the beans for at least 12 hours in cold water.

Rinse the beans and then boil in cold water in a pot.

When it boils, remove from the heat, drain the beans using a sieve under a stream of cold water. Repeat the procedure 2 times.
Put the beans in the pot for the third time and pour 6 liters of cold water on top.
Collect foam from the surface if it forms.

Add the smoked ciolan, the smoked rib and the bay leaves.

Cover with a lid and cook for an hour. Remove the meat from the juice and let it cool a bit so you can debone and cut it.

When the meat has cooled a little, cut it into suitable cubes.

Put the pieces of meat back in the water and then add the onion, celery, parsnip and carrot all cut into small cubes. Add tarragon and dried thyme. Stir and put the lid on. Boil for 20 minutes.

Add the red and yellow peppers cut into small cubes. Boil for another 15 minutes.

Add the tomato juice and crushed garlic.

Boil for another 7 minutes. Turn off the heat and add salt and ground pepper.

Add dried tarragon and finely chopped parsley. Put the lid on and let it infuse for 10 minutes.

After 10 minutes take the lid and stir in the pot a few times.

Serve hot soup with vinegar, bread and hot peppers.

  • 500 g dry beans with medium grain
  • A smoked hamster up to a kilogram
  • 2-3 onions
  • 1 carrot
  • 1 parsnip root
  • 1 parsley root
  • 1 capsicum
  • 2-3 cloves of garlic
  • 100 ml of sunflower oil
  • 1 bunch of dill
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme or half dry
  • Salt and pepper to taste

Well, let me see a Romanian who doesn't like smoked bean soup, smoked pork chop or smoked pork ribs, a wonder. Maybe many housewives would say that it is difficult to prepare, but in my opinion it seems to me to be the simplest soup you can prepare. You really have to wait for the beans to boil, but it would be better if you put the beans in the evening in cold water and when you return from work they are already hydrated and soft, you just have to boil them quickly in 2 waters .

For smoked bean soup when served, it should not be missing from a water onion, red or green onion if it is the season. It goes great with pickled brine. As a smoker you can use pork chop, ribs, bacon, kaizer, but it is best with a smoked pork leg.

Leave it to boil until the soup is ready, when it needs to be seasoned. For 1 medium smoked ciolan and 1/2 kg of beans we use about 250 ml broth homemade (or 1 healthy tablespoon of tomato paste) and tarragon in vinegar to taste (if you use fresh tarragon you will not get that soup-specific flavor).
