Dumpling soup


We cut the onion into juliennes, the carrot into thin slices or as we wish and we boil them after 15 min. add the diced zucchini and oil and continue to boil. Boil the diced potatoes separately.

Beat the eggs well, add the semolina and baking soda and mix well. Set aside for 10-15 minutes, do not immediately make the dumplings. Put the water to boil in a separate pan for the dumplings, and when the water boils and 10-15 minutes have passed, boil the dumplings with a spoon.

This pea soup with dumplings and chicken is a classic of Transylvanian cuisine. A soup of my childhood (from Cluj, Sibiu and Arad). It is made in summer, with fresh peas and chicken entrails (hearts, pipettes, bones, wing heads, chest carcasses). In the off-season it is made with frozen or canned peas. The dumplings are made of flour (like paprika) but smaller in size (like thicker rags). In our country they are called Nockerli or nokedli. See here how they are made.

At the end, the soup is sprinkled with freshly chopped dill and served with sour cream. A cheerful and colorful soup, especially tasty. I didn't have pipettes and hearts at hand, so I used 3 chestnuts. I also mentioned that I always put pieces of meat or bones in the freezer that & # 8222 fall & # 8221 from other dishes & # 8211 that's why! The bones give an intense and pleasant taste to any soup and it's a shame to throw them away. What can I say about how quickly this soup is prepared? In 40-45 minutes it is ready. If hearts and pipettes are used, their cooking time is a little longer (it can be shortened by cutting them into smaller pieces).

Vegetable soup with semolina dumplings

Most housewives usually make chicken soup with dumplings, but I like it so much and they make it so easy that I often put them in simple vegetable soups, like this one today.

The semolina dumplings enrich and give consistency to the vegetable soups, and the little ones love them, so don't hesitate to use them too.

To make sure you get fluffy dumplings, it is preferable to use a kitchen scale (I have a very cheap one, like this one here). Weigh the whole eggs, and prepare exactly the same amount of semolina. If the ratio between the amount of liquid (ie beaten eggs) and that of semolina is correct, you can't go wrong with this recipe.

Because it contains almost no fat, except for eggs, vegetable soup with semolina dumplings is a dietary preparation and can be served both cold and hot.


Dumpling Soup - Recipes

Ingredient:

Soup ingredients

• 2 carrots
• 1 celery

• 4 tablespoons of semolina
• 1 tablespoon of starch
• 1 onion
• salt and pepper to taste

Peel the vegetables. Put the roots on the grater and cut the onion into small pieces. If you want to prepare the soup faster, you can chop all the vegetables with the help of a food processor.

Saute the vegetables in a saucepan with a little oil and water until soft. Then pour water over them and let them boil for about a quarter of an hour.

In the meantime, you can prepare the dumplings. Mix the flour, semolina, starch and finely chopped onion in a bowl. Add a little warm water to get a thick paste. Do not let the composition stand, otherwise you will get hard dumplings.

Take a tablespoon of the composition and put it in the pot with the boiling soup. Let the dumplings boil for about 5-10 minutes, taste the salt and pepper, then turn off the heat. Finally, sprinkle the finely chopped green parsley over the soup.

Put the lid on and let it infuse for a few minutes, then the soup can be served.

Dust soup recipe

I think dumpling soup it's one of the first dishes I cooked on my own, and in college I remember how much my roommates enjoyed it when I decided to make a meatless dumpling soup.

I saw that most of the people I know cook this soup with chicken: I got used to it from college, and then even if I did it for financial reasons, to make it simple, only with vegetables and semolina dumplings.

It's one of the simplest recipes I think, so I won't insist too much on the preparation and I'll just explain how I make my soft and fluffy dumplings out every time.

ingredients (4 servings, double the quantities if there are more):

a little celery
half a parsnip root
a carrot
two medium potatoes
an onion

For dumplings:

an egg
a teaspoon of oil
salt and baking soda powder

The vegetables are boiled cut or whole, according to preference, with a pinch of salt. I cut them, except for the onions, which I boil whole and throw away.

I add them one by one in the soup, with a teaspoon, taking care not to boil the soup while I put the dumplings. Let them simmer for about 10 minutes, until they boil.

That's about it. In the meat-free version, the total cost of the recipe for 2 people does not exceed 5 lei, especially in summer, when vegetables are quite cheap. And in winter we can use vegetables from the summer in the freezer or in brine, right?

:) Looks like you're dead to spoil our joke. I remember spending hours queuing at eggs and milk (and most of the time leaving empty-handed) to make my mother's favorite dessert: burnt sugar cream. So maybe only semolina was and then, definitely not eggs! :)
At the risk of sounding cynical, if you really want an answer from me, here it is: money is earned through work. If we don't have the money to buy a chicken for soup, then we work and earn it (or we give up chicken and make soup only with dumplings). I know, it was nice when the communists held our hand and gave us a job, a free apartment, a free college, etc., but times have changed and we have to adapt. Being too young, I did not benefit from any of this and here I can afford to buy a chicken from time to time and, overall, I am quite happy with my life. The life I made myself, as I wanted and as my head went. After all, expressions like "You have a book, you have a part" have always been valid.

Come on, I did this one too !! The outcome. Very very good. Now I put out the fire and started doing it. raisin cookies :))). In the donut recipe I told you that I also made pilaf, now, in the soup recipe I tell you that I started making cookies :)) Nely
